| Ingredients: Makes one 23 cm / 9 in cake |
| 50 g/2 oz butter or margarine 225 g/8 oz/2 cups plain (all-purpose) flour 2.5 ml/0.5 tsp salt 15 ml/1 tbsp baking powder 30 ml/2 tbsp caster (superfine) sugar 250 ml/8 fl oz milk |
| Method: Rub the butter or margarine into the flour, salt and baking powder until the mixture resembles breadcrumbs. Stir in the sugar. Gradually add the milk and mix to a smooth dough. Press gently into a greased 23 cm/9 in cake tin (pan) and bake in a preheated oven at 160°C/325°F/ gas mark 3 for about 30 minutes until light golden brown. |
